Leith Hall bed and breakfastSusan and I just visited Beach Plum Farm for the first time. Sometimes it takes us Cape Mayers a while to discover new local attractions. It is an organic farm, garden, gift shop, and restaurant owned by the Congress Hall / Virginia Hotel crowd.  It is really beautiful. There’s a wooden barn-like building which houses a breakfast and lunch spot, a gift shop on the first and second floors, a produce stand, and some herbLeith Hall bed and breakfast plants to take home. The building is flanked by a formal herb garden laid out as a parterre. There are pick-nick tables and chairs and benches to sit among the flowers. There are golf cart tours of the grounds.

Beach Plum Farm is an idyllic country experience only a couple of miles from Leith Hall. It’s beautiful. It’s calm. And it’s healthy. Is it the last installment of  The Jersey Shore? No, its A Comedy of Errors by Shakespeare, as performed by the very bizarre REV Theater Company. It’s the lighthearted, fun approach to Shakespeare, and a great afternoon at the Physick Estate. The performances will be July 14 through 18 and July 21 through 25. This Friday and Saturday  (3-27 and 28), Cape May will host its eighth annual Singer Songwriter weekend. Though the weekend is designed for singer-songwriters, giving them the skills and information to further their careers, the many performances in locations all around town make a wonderful experience for us audience members. Not only are there a lot of performers to choose from, all of the acts (except Congress Hall) are free!

Leith Hall Mexican Wedding Cake

We recently had two sisters as guests, Phoebe and Joann, who were a delight to talk to. Phoebe told me about a cake that she makes that isCape May bed and breakfast incredibly simple to make, very rich, and pleases all of her guests. She was right. She knows her stuff. It’s called Mexican Wedding Cake, though I suspect that it has nothing to do with Mexican weddings. It is made with an entire large can of crushed pineapple, and it looks like the batter will produce a light-colored cake. But it doesn’t. It produces a very dark, caramelized cake that is delicious when served with cream cheese icing.

Our recent guests, Erik and Lisa, had some and Lisa asked for the recipe – so here it is. Thank you Phoebe and enjoy it Lisa.

Mexican Wedding Cake

2 c. all [purpose flour
2 c. sugar
2 eggs
2Tbs. Baking soda
1 tsp. Vanilla extract (I use vanilla paste)Cape May Bed and Breakfast
1 can (20 oz.) crushed pineapple DO NOT DRAIN
1 cup. Roughly chopped pecans
9′ x13” metal baking pan, lined with parchment
350 F. 35 minutes

Cream Cheese frosting
1 stick (½ cup) unsalted butter
8 oz. Philadelphia cream cheese
1 Tbs. Vanilla extract (I use vanilla paste)
3 cups powdered confectioner’s sugar

To make cake, mix all of the ingredients together in a bowl by hand. Turn into the baking dish and bake.Cape May bed and Breakfast

To make icing – Beat all of the ingredients in an electric mixer in order, starting with the butter. Beat until light and fluffy. Spread onto completely cooled cake.

Food and WineJust when you thought the Cape May season was winding down, the middle of September brings the Cape May Food and Wine Celebration. There will be spectacular dinners  like the Farm to Table dinner presented by the Red Store in Cape May Point and a Bourbon Tasting Dinner at Alethea’s Restaurant in the Inn of Cape May on the beach in Cape May.  The Chocolate Lovers Feast will be at The Blue Rose, oneFood and Wine of Cape May’s newest and best restaurants.  There will also be special dinners, tours, and grape picking at three of Cape Mays vineyards – Hawk Haven, Natali, and Cape May Winery.

Just imagine your stay in Cape May. The ocean will still be warm, the weather will still be ideal. There will be lectures and demonstrations, tastings from many Cape May restaurants at Food and WineConvention Hall; winery, brewery, and bourbon events,  samples and tastings, and feasting galore. Fireworks – Fireworks – Fireworks !

This year, Cape May will once again come alive with spectacular fireworks off the beach in front of Congress Hall. The show will begin at about 8  P.M.. Just bring one of our sand chairs down to the foot of Ocean Street, or walk to the right a block and enjoy the show. This year, there will also be lots of music surrounding the 4th.. June 30th will feature the Cape May Diamonds at Convention Hall, as well as  The Doctors of Rhythm at Rotary Park just beyond the Mall.  July 1, the Logond Honors Band  will perform Latin jazz and funk at 7P.M.

Fireworks

Just after Independence Day, John Clark Little Big Band will play on July 6 at Rotary Park.  Finally, on July 7th, is Cape May’s Independence Day Parade – which is the essential small town Americana parade. The Coast Guard Band will be there as well as three string bands – so those of you who are nostalgic for a Philadelphia childhood will feel right at home.  That evening, there will be two concerts – the Golden Eagle Band and the Fralinger’s String Band.

Breakfast Frittata Leith Hall for Cheryl

Our guest, Cheryl, requested this recipe for frittata that I serve for breakfast. I’ve found that people don’t want exotic or unusual ingredients at breakfast-time. They want comfort. I bake the frittata in a quiche pan. Since a frittata means fried in Italian, I guess it’s not a real frittata – it’s sort of a quiche without a crust.
You can also add diced cooked potato to the frittata and make it a luncheon dish or even a light supper.

Breakfast Frittatafrittata
6 eggs
1 quart of whole milk
2 Tbs. cornstarch
½ tsp. salt
1 tsp. ground black pepper
1 Tbs. chervil
½ of a large red bell pepper or 1 small red bell pepper – diced
½ of a small red onion – diced
About 3 oz. Swiss cheese , grated

frittataBeat the eggs, milk, cornstarch, salt, pepper, chervil together. You can adjust the amount of milk to fit your quiche pan. If you add another cup of milk, add another teaspoon of cornstarch. Saute the pepper and onion in a little bit of oil or butter. Sprinkle the pepper and onion on the bottom of the quiche pan. Sprinkle a generous layer of Swiss cheese over the pepper and onion mixture. Ladle the egg batter on top of the other ingredients. Bake at 375 F. for about twenty minutes. The frittata is done when the top is lightly browned and the center is no longer liquid. Cool for 10 minutes before slicing and serving.

Pumpkin Apricot Cake from Leith Hall

I served this pumpkin apricot cake this past weekend for afternoon tea. The simple syruppumpkin apricot cake makes it very moist and delicious. I like pumpkin and apricots together because they are so similar (orange color and gooey). You could use golden raisins, or dried cherries, or nuts. (Suzie doesn’t like nuts, so they seldom turn up in my recipes)You could use cream cheese frosting – either on a loaf or on traditional round layers.

Pumpkin Apricot Cake from Leith Hall

3 1/2 c. all-purpose flour
1/4 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. each nutmeg, cloves, cinnamon
1 1/2 c. each granulated sugar and packed brown sugar
1 c. oil
2 c. canned pumpkin
4 eggs

2 cups dried apricots, cut up

Simple syrup= 1 cup of sugar and 1 cup of water, brought to a boil

Mix all of the dried ingredients together. Mix all of the wet ingredients together. Mix all ofpumpkin the ingredients (except apricots) together with a wire whisk. Mix in the apricots with a wooden spoon or rubber spatula. Pour into 2 parchment-lined and greased  9 1/2 x 5 1/4-inch loaf pans. Or bake in  plain or fancy bundt pans, or in layer cake pans

Bake at 350 degrees for 40 to 60 minutes (for a loaf or bundt, less for layers) or until cake is firm and springs back when prodded with a finger. Cool for 5 minutes. pour simple syrup on cakes when cool. Wait at least a couple of hours before unmolding and serving.

Maple Pecan Squares

Maple Pecan Squares

This is the second recipe that Lindsay asked for. They are maplebed and breakfast Cape May syrup flavored cake squares with a handful of crushed pecans in the cake. Of course, you could use any nuts in the cake, or no nuts, or raisins, or any chopped dried fruit. You could also substitute honey for the maple syrup for a different flavor.

2 cups all-purpose flourbed and breakfast Cape May NJ

3/4 cup oat bran

1/4 cup sugar

2 teaspoons baking powder

3/4 teaspoons baking sodaCape May bed and breakfast

1 teaspoon salt

1/2 teaspoon cinnamon

1 cup well-shaken buttermilk

1/3 cup maple syrupCape May NJ bed and breakfast

1/2 stick unsalted butter, melted and cooled

2 large eggs

1 cup (I use my hand to measure, so it’s probably closer to 2 cups) pecans

For the icing:

1 cup confectioner’s sugar

About 1 cup maple syrup

 

350 F.  8”x8” metal baking pan, lined with cooking parchment and sprayed with cooking spray.

Whisk together flour, oat bran, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.

In a separate bowl, whisk together buttermilk, maple syrup, butter, and eggs. Add to dry ingredients and stir until just combined.

Bake 20 to 25 minutes, until it springs back when lightly prodded with a fingertip.

To make the icing, beat the confectioner’s sugar with an electric mixer adding enough maple syrup to make it flow.

Cool cake. Turn out onto serving platter. Cut into sixteen squares, and then drizzle with maple icing.

Peach Upside Down cake for Lindsay

Cape May bed and breakfastLindsay asked for the recipe for this peach upside down coffee cake which I served at teatime last week. I cut it into four squares by four squares – for sixteen servings. The cake is plain, but the melted butter and sugar syrup takes care of that. I’ll post the other recipes that Lindsay requested afterbed and breakfast Cape May this one.

For the upside-down topping:

1 stick unsalted butter

1 cup brown sugar

For the cake:

2 cups all-purpose flour,

½ cup granulated sugar

1 Tbsp baking powderbed and breakfast Cape May New Jersey

½ tsp salt

1 cup whole milk

1 Tbsp pure vanilla extract

1 large egg

4 oz unsalted butter (½ stick)

1/3 cup sour cream

First, line an 8”x8” metal baking pan with cooking parchment and spray with cooking spray like Pam. Melt the stick of butter for the topping and pour it into the baking pan. Sprinkle the cup of brown sugar on top of the melted butter, then arrange the peach slices (or any other fruit) on top of the butter and sugar mixture.

Mix all of the cake ingredients together in a bowl, then pour on top of the fruit. Smooth the top and bake at 350 F. for about 20 to 25 minutes until it is thoroughly baked. If the middle of the top seems soft, turn the oven down and return the cake to the oven for a few minutes ‘till the middle is firm. When it’s done, remove the cake from the oven and immediately reverse it onto a serving platter with a rim. Do this by putting the serving platter on top of the cake, upside down. Then flip the whole thing over. The sugar/butter topping will run everywhere, so the serving platter must have a rim.

Remove the metal baking pan and peel off the paper, being careful not to burn yourself on the molten lava of butter and sugar.
