Cape May bed and breakfast

 

We recently had two sisters as guests, Phoebe and Joann, who were a delight to talk to. Phoebe told me about a cake that she makes that isCape May bed and breakfast incredibly simple to make, very rich, and pleases all of her guests. She was right. She knows her stuff. It’s called Mexican Wedding Cake, though I suspect that it has nothing to do with Mexican weddings. It is made with an entire large can of crushed pineapple, and it looks like the batter will produce a light-colored cake. But it doesn’t. It produces a very dark, caramelized cake that is delicious when served with cream cheese icing.

Our recent guests, Erik and Lisa, had some and Lisa asked for the recipe – so here it is. Thank you Phoebe and enjoy it Lisa.

Mexican Wedding Cake

2 c. all [purpose flour
2 c. sugar
2 eggs
2Tbs. Baking soda
1 tsp. Vanilla extract (I use vanilla paste)Cape May Bed and Breakfast
1 can (20 oz.) crushed pineapple DO NOT DRAIN
1 cup. Roughly chopped pecans
9′ x13” metal baking pan, lined with parchment
350 F. 35 minutes

Cream Cheese frosting
1 stick (½ cup) unsalted butter
8 oz. Philadelphia cream cheese
1 Tbs. Vanilla extract (I use vanilla paste)
3 cups powdered confectioner’s sugar

To make cake, mix all of the ingredients together in a bowl by hand. Turn into the baking dish and bake.Cape May bed and Breakfast

To make icing – Beat all of the ingredients in an electric mixer in order, starting with the butter. Beat until light and fluffy. Spread onto completely cooled cake.

Decadence in Cape May

Meerwald.  Hawk Haven winery has organized this wonderful event for next  August 16th and again on August 23rd. You cruise on the gorgeous oyster schooner A.J. Meerwald. You feast on hors d’oevres provided by the Red Store of Cape May Point (chef Lucas Manteca) and Quahog in Stone Harbor. You quaff (or guzzle) wines from Hawk Haven. Monarchs and Hummingbirds Earth Day April 20

Monarchs and Hummingbirds at the Nature Center of Cape May

monarchs and hummingbirdsThe Nature Center of Cape May will have lots of offerings to celebrate Earth Day, April 20th. You may know that Cape May is famous for its Monarch Butterflies, migrating on their way to and from Yucatan in Mexico. You may not know that they need milkweed to survive. Pat Sutton will show you how to encourage a variety of milkweed species. The session begins at 10:30 at the Nature Center of Cape May

Pat Sutton will also offer a session about ruby-throated Hummingbirds that same monarchs and hummingbirdsafternoon starting at 1:00 P.M.. Learn how to create a hummingbird garden.

April 20 is Earth Day

If you bring your garden tools, you can help deadhead, weed and prune the Nature Center’s gardens and participate in Clean Ocean Action’s annual Beach Sweeps. This will be just the beginning of the season’s offerings at salt-marsh-safarithe Nature Center and heralds the start of Salt Marsh Safari – beginning April 27 – the Nature Center’s  ever-popular exploration of the shore.

Cape May Craft Beer and Crab Festival

Cape May Craft Beer and Crab Festival

 Cape May’s Craft Beer and Crab Festival hit town last Saturday. The day was gray and Cape May Craft Beer and Crab Festvalintermittently rainy – not ideal beach weather. So lots of people showed up on the lawn at the Physick Estate. There was a long (but fast-moving) line for crabs and crab cakes under the striped tent, and lots of covered seating nearby. There was a small crafts fair – I particularly liked the Guatemalan pottery – pony rides, and a teensy-weensy circus appropriately called the Tiny Circus.

 

The next big food festival will be in September. The Cape May Food and Wine Celebration will include special dinners, winery tours, Scotch whiskey tastings, and talks by famous chefs. A new festival in Cape May –  The Craft Beer and Crab Festival will be this coming August 11 on the grounds of the Physick Estate. The café patio will be transformed into a food court with crabs (of course), pulled pork barbecue, corn on the cob, and lots of other cape may craft beer and craft festivalfood. There will be several local breweries represented and music on the outdoor stage, pony rides for the kids, a little Victorian “midway” with games of skill and chance. There will also be a crafts show on the front lawn of the Physick Estate. With all of the games, music, food, beer and crafts show on the grounds, the Physick Estate shouldCAPE MAY CRAFT BEER AND CRAB FESTVAL be the fun place to be on Saturday August 11th. This is restaurant week in Cape May. Many of our best eateries have prix fixe, three course dinners for $35. CapeMay Music festival, but very different.  The first is Tuesday June 5, and is a performance by the New York Chamber Ensemble featuring works by Mozart and Mendelsohn. The New York Chamber Ensemble is so moving and their virtuosity is extremely impressive. The setting in the Episcopal Church of the Advent is also so intimate and beautiful that their concerts are always a night to remember.

The next concert is by the Bay Atlantic Symphony orchestra on Thursday, June 7. Jed Gaylin is the conductor and he always explains what the orchestra is about to play, giving you more understanding and insight into the work.

Some classical work that you’ve heard before is suddenly new and fresh and you come away with more appreciation and enjoyment than you ever had before. It even works for difficult music, though this concert will be all very easy to listen to. The June 7 concert will be all Viennese composers; Webern, Hayden, Brahms and Schumann.

The Gaylin family often stays with us at Leith Hall and it is always a joy to see them again.

CAPE MAY RASPBERRY SOUR CREAM COFFEE CAKE for Donna B.

A recent Leith Hall b&b guest, Donna B.,  emailed me for two recipesbed and breakfast raspberry sour cream coffee cake for treats that we serve at afternoon tea. The first was Cape May bed and breakfast Gingerbread which was in an earlier post, and this is the second – Raspberry Sour Cream Coffee Cake. Of course, you could substitute any other preserves, but then it would be apricot or orange coffee cake.

 Raspberry Sour Cream Coffee Cake

2 tablespoons canola oil or melted butter

4 cups all-purpose flouregg for Raspberry sour cream coffee cake

1/2 cup granulated sugar

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 large egg

1/2 cup milk

2 teaspoons vanilla extract or vanilla paste

1/3 cup sour cream

1 small jar of raspberry preservesraspberry preserves

1 cup packed light-brown sugar

1 1/2 teaspoons ground cinnamon

1 cup (2 sticks) unsalted butter, melted and cooledbrown sugar for Leith Hall raspberry sour cream coffee cake

Confectioners’ sugar, for dusting

 

Line a 9”x11” baking pan with cooking parchment and spray with cooking spray.

Mix 1 1 1/2 cups of the flour, sugar, baking powder, and salt. In a second bowl, whisk together egg, milk, canola oil or butter, 1/3 cup sour cream, and vanilla. Mix dry ingredients into egg mixture.

Spread batter evenly into prepared pan.  Drop raspberry preserves over batter by random teaspoons full. Combine remaining 2 1/2 cups flour, brown sugar, and cinnamon. Pour melted butter over flour mixture, and toss with a rubber spatula until large crumbs form. Sprinkle crumbs over batter.Cape May bed and breakfast raspberry sour cream coffee cake

Transfer pan to oven, and bake for about 23 minutes. . Continue baking until a cake tester comes out clean or cake springs back when prodded with a finger.

Roger and Judy’s Pumpkin Apricot Cake

Brave Leith Hall Guests Follow Elan’s Recipes

This past weekend, Roger and Judy, who visit us every year and are so much fun to talk to, Leith Hall guestsasked for the recipe for the pumpkin and apricot cake that I served for tea. The last time they followed one of my recipes (for banana chocolate cake) the chocolate exploded as it was poured into a bowl. Undeterred, they are willing to follow another recipe, no matter what the danger.

 PUMPKIN APRICOT CAKE

3 1/2 c. unbleached flour
1/4 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. each nutmeg, cloves, cinnamon
1 1/2 c. packed brown sugar

½ c. white sugar
1 c. oil
2 c. canned pumpkin
4 eggs
1 c. dried apricots, cut into small slices

1 c. simple syrup made of 1 c. water boiled with 1 c. sugar

Mix together flour, baking powder, baking soda, salt and spices. Add the sugars, mixing pumpkin apricot bundt cake at teatime at Leith Hall bed and breakfastwell.

Mix dry ingredients with the oil and pumpkin, stirring until well combined.

Add eggs, one at a time, blending thoroughly. Pour into 2 greased and floured decorative bundt pans. I use a silicone fluted bundt ban and a variety of Teflon coated bundt pans.

pumpkin apricot cake at teatime at Leith Hall Cape MayBake at 350 degrees for 50 to 60 minutes or until cake springs back when prodded with a finger. Cool in pans. Dribble ½ c. simple syrup over each cake.  Remove from pans. Place on wire rack to cool.
