Blueberry Muffins for Vicky.blueberry muffins Cape May bed and breakfast

I make these blueberry muffins for my guests whenever I make scrambled eggs with cream cheese and dill. When I can get them, I use wild blueberries from Wyman’s. Otherwise, I use fresh or frozen cultivated blueberries.

2 cups all purpose flour

1 Tbs. Baking powder

½ tsp. Salt

½ cup sugar

1 egg

1cup milk

¼ cup melted butter

1 tsp. Lemon extract

1 cup blueberries

Beat the egg, then beat in the milk, butter, lemon extract. Mix the flour and baking powder, salt, and sugar. Mix the dry into the wet ingredients util incorporated but not more. Mix in the blueberries. Portion into paper lined and cooking-sprayed muffin cups. Bake at 375 F. for 10 minutes on top shelf, then 10 minutes on bottom shelf. They should spring back when fully baked. If they don’t spring back, leave them in the turned-off oven for 3 to 5 minutes to firm up.

This general recipe also works for any other kind of muffins. Leave out the lemon extract and blueberries and replace with vanilla paste and chocolate chips for chocolate chip muffins. Or replace with orange extract and dried cranberries, or replace the sugar with light brown sugar, the lemon with vanilla, and the fruit with rum soaked raisins for rum-raisin muffins. Or substitute  coconut extract and shredded sweetened coconut.  Vanilla, a finely chopped apple and cinnamon will make apple muffins.

Three Cape May organizations are presenting festivals – all running concurrently. The Mid-Atlantic Center for the Arts puts on Spring Festival with dozens of tours and events. New Businesses in Cape May!

There are several new businesses in Cape May, that means new shopping and dining adventures!  Though you won’t need it when staying at Leith Hall, as breakfast is supplied by Elan, there’s a new breakfast place near the Acme called Egg and Dart. If you’ve ever shopped at Galvanic, Cape May’s own little bit of Williamsburgh, Brooklyn, you’ll be happy to know that there will be a second location at 208 Ocean Street for the summer. So, if you’re young, cool, and slim, you know where to go. (I’m none of those things, so I don’t fit in the clothes.) Their first store is mostly black, so this one is mostly white. Very nice.

 

On Carpenter’s Lane (the parking street just before the Washington Street Mall) the Italian bath shop has been replaced with Quirk & Co, which is a gift new businesses in Cape Mayshop specializing in items made within one hundred miles of Cape May. At the far end of the Mall, across from the Victorian Motel and Congress Hall, the popcorn shop has been replaced by new home of Victorious. You may know Victorious as the home of wonderful and interesting accessories and jewelry. They always have the most stylish and carefully chosen things, and I’m sure they will continue that great tradition in the new location.  Speaking of jewelry, The new estate jewelry store that replaced Artisan’s Alcove at Ocean Street and Lafayette has a second location in Congress Hall. They are both called Queen May estate jewelry.

Most important, there’s a new bakery in town! On Beach Avenue, in the old movie house, is Madison’s Bakery – just right for coffee and a nosh during a hard day of lying in the sun.

Murder mystery. Good news to share with our guests. Suzie’s sister, Rena, has just had a book published! I’ve read it and it’s really entertaining and charming. It’s called Murder Beach and is a murder mystery with a ghost, set in California near San Francisco. So, you’re considering visiting Cape May for the second weekend of Spring Festival, May 8, 9, and 10. As we described in the last post, there are dozens of things to do – but no, you want more. Well, we’ve got it. That weekend is also our first Coast Guard Community Festival. Cape May has just been designated a Coast Guard Community. We’ve always been very close to the folks at the Coast Guard base. Lots of Cape Mayers are Coast Guard spouses and retired career Coast Guarders. This May, were going to celebrate the Coast Guard in Cape May.

There will be tours of Coast Guard boats, fishing boats, the Cape May harbor, and a search-and-rescue operation. There will be a barbeque, dinners with entertainment, as well as exhibits of Coast Guard stuff. Visit the Cape May County Chamber’s website for more information. Karen Akers moves Cape May to the Big Time

 

 

Karen Akers is coming to Cape May!

Karen AkersThe show is An Evening of Cole Porter: Anything Goes. The date is Monday July 22 and the price is fifty dollars. Now Cape May Stage can take its place alongside the Kennedy Center in Washington and the Algonquin in New York in hosting Karen Akers.  She is the best and most famous cabaret singer in America and will feature some of my favorite Cole Porter songs like I Get a Kick Out of You. (Who else would rhyme “Flying too high with some guy in the sky…” that’s four rhymes in nine words) Some of the songs will be melodramatic tear-jerkersKaren Akers like I love Paris, but many others will be the sarcastic, smart alecky Cole Porter lyrics I love like I’m Always True to you Darling (in my fashion) Look at – “If a custom tailored vet, Asks me out for something wet. When the vet begins to pet, I cry Hooray” Nobody wrote cheeky lyrics like Cole Porter.

The World Series of Birding begins this Saturday

Forget Baseball, this is the World Series!

world series of birdingThis Saturday, May 11th, the thirtieth annual World Series of Birding will begin right here in Cape May. There will be youth and senior teams as well as the cutthroat competition among the thousands of participants, who raise over six hundred thousand dollars for conservation each year.  The event is organized by NJ Audubon Society and will begin at midnight on May 11th and  end at midnight May 14th

The World Series of Birding really is worldwide

You may know that Cape May is one of the ten top birding sites in the world. We’ve hadwirld series of birding guests at Leith Hall from as far as China, Kenya, and Germany for birding both spring and fall. Guided  walks and classes start at either the Northwood Center on Lily Lake in Cape May Point, or at the Research and Education center on Route 47 in Cape May Court House.
